The Sous Chef is responsible for supervising food production for a specific shift(s) or food station(s). This includes staffing, scheduling, and working with the Chef on performance management/evaluations. This individual is expected to be capable of directing day-to-day work of employees, through supervision of staff directly. The Sous Chef must be able to enforce good housekeeping and quality control in food production, and additionally must follow established menus and recipes, create specials, and maintain control over food and labor costs. This position also allows you to assist with training. Discounted housing available.
The “must haves” for this position include:
- 3+ years previous casual fine dining cooking experience, including supervisory experience within the kitchen
- Able to work long hours and varied shifts
- Knowledgeableof workingin a small fast paced kitchen and staff
- Knowledge of “from scratch” soup preparations and sauces
- Skilled in all aspects of cooking
- Food handling knowledge
- Food costing and accountability
- Ability to provide your own knives
We prefer that you additionally have the following skills / experience, but it is not required:
- Excellent people skills
- Excellent communication skills
- Excellent Knife handling skills able to train proper use of knives to less experienced staff
