Position Summary:

The Sous Chef, under the supervision of the Chef, provides for a safe, clean kitchen environment complying with all applicable sanitation, health and personal hygiene standards and ensuring to exceed guidelines for all regulatory survey requirements, The Sous Chef is responsible for preparing and/or directing the preparation of food to be served on the weekends, assisting with menu preparation, controlling cost and following established food production programs and procedures. The Sous Chef is responsible for appropriate use of facility supplies and equipment to minimize loss, waste and fraud.

Qualifications:

  • Emotionally mature and caring individual who is willing and physically capable of the primary duties of maintaining the kitchen. Must also have the capability of cooking a variety of balanced meals for up to eighteen people.

  • Must have the ability to work with minimal supervision; have a keen sense of orderliness and cleanliness, a congenial personality and the ability to work with professional staff.

  • Must either have certification for Food Manager, Dietary Manager, or be a Registered or Licensed Dietician, Dietetic Registered Technician, or Health Department Sanitarian. Documentation of satisfactory completion of an approved assisted living facility core training course for food services and nutrition will be considered in lieu of the above.

Main Duties and Responsibilities

Manages the kitchen and meal preparation on the weekend in the absence of the Chef. Keeps a list of groceries and supplies that need to be replenished.

Manages meal preparation to budgeted guidelines and runs a no waste kitche n .

Oversees cooking for all residents on the weekend using standardized recipes either by preparing meals or ensuring that appropriate individuals prepare meals.

Assists the volunteer with the establishment of the grocery list and the buying of the groceries as necessary.

Rounds on the patient care staff on the weekends to ensure meeting the dietary

needs of each individual resident.

Must prepare therapeutic diets as ordered by the residents' health care provider for residents who require special diets.

Assists the Facility Manager in maintaining health, fire, and safety codes according to established policy and procedure.

Assists the Facility Manager and volunteers with special functions and holiday decoration and meal preparation when they fall on the weekend.

Assures utilization of universal precautions for infection control at all times.

Performs other duties as assigned such as maintenance, in-house catering and keeping a running excel spread sheet of cost and outcomes weekly.

Required to comply with all Covenant Care Policies, Procedures and Personnel Policies, including those specifically addressing disaster preparedness and response.
