Job Description
Job Title: Prep Cook
The Prep Cook works 4 days on and 2 off. The first 2 days they work the AM COOK position (5:30 am-2 pm); the 2nd 2 days they work the PM Cook position (10 am-6:30 pm); then they are OFF for 2 days.
Reports To: Dietary Service Coordinator/Manager/ED
Location: Lakeside Nursing & Rehabilitation Center
Status: Non-Exempt
- Experienced in bulk cooking and multitasking.
SUMMARY
Prepares and cooks meals for residents and maintains standards of kitchen cleanliness.
ESSENTIAL DUTIES AND RESPONSIBILITIES include the following. Other duties may be assigned.
1. Prepares all food according to the menu in a safe, sanitary manner under the direction of the dining services coordinator/manager.
2. Ensures proper preparation, portioning, and serving of foods according to standardized recipes.
3. Prepares quality food products according to standardized recipes and menus.
4. Prepares quality food in a timely manner at specified meal times.
5. Assumes responsibility for total kitchen operations and handles all situations in the kitchen according to policy.
6. Responds to resident issues or concerns that may occur in the dining room.
7. Follows departmental procedures including sanitation, safety, and cleaning schedules.
8. Follows proper cleaning procedures and storage of all dishes, utensils, and cooking equipment.
9. Ensures all food in the refrigerator, freezer, and dry storage are labeled and dated.
10. Oversees proper food handling and utilization of all food to prevent contamination, increase quality, and reduce cost.
11. Suggest menu or recipe changes to utilize leftovers and other supplies.
12. Cleans all foodservice equipment, kitchen, and food storage areas.
13. Coordinates work of dining services aides.
14. Efficiently uses the time to complete assigned work.

SUPERVISORY RESPONSIBILITIES
The cook may supervise the dining services aides if the dining services coordinator/manager is not available.
QUALIFICATIONS

EDUCATION and/or EXPERIENCE
High school diploma or general education degree (GED) preferred; and one to three months related experience and/or training; or equivalent combination of education and experience. The position requires knowledge of special diets.
LANGUAGE SKILLS
Ability to read and comprehend simple instructions, short correspondence, and memos. Ability to write simple correspondence. Ability to effectively present information in one-on-one and small group situations to residents, residents’ families, and other employees of the company. Ability to effectively communicate in English and understand and follow written and oral instructions.
MATHEMATICAL SKILLS
Ability to add, subtract, multiply, and divide into all units of measure, using whole numbers, common fractions, and decimals. Ability to compute rate, ratio, and percent and to draw and interpret bar graphs.
CERTIFICATES, LICENSES, REGISTRATIONS
State food service certification required.
PHYSICAL DEMANDS

WORK ENVIRONMENT
The employee is occasionally exposed to fumes and toxic caustic chemicals. The environment is characteristic of the facility in which healthcare is provided to the frail elderly. The noise level is usually moderate.
