LM Restaurants is seeking an Executive Chef for our full service, family style Greek restaurant in Raleigh, North Carolina. Paid relocation is available for well-qualified culinary candidates with exceptional experience.

How you’ll lead:

  • Own the Heart of the House and its impact on the guest experience. Lead the selection, coaching, and recognition of a highly effective team. Develop team members for future opportunities.
  • Ensure team is thoroughly trained, understands expectations, and demonstrates Carolina Hospitality. Provide ongoing feedback, manage performance, and drive accountability. Adhere to legal and company standards.
  • Communicate regularly and effectively with staff, guests, and other members of management.
  • Oversee inventory and ordering for your primary department. Be a good steward; act with ownership mentality.
  • Create fair, timely schedules for the HOH, ensuring appropriate staffing for expected volume. Prepare administrative reports as needed.
  • Ensure the safety of employees and guests at all times
  • Direct the product development process from R&D of new items through restaurant roll-out.
  • Responsible for documenting accurate recipes, procedures, new product specifications, plate costs, and troubleshooting guidelines. Designs, develops or modifies recipes.
  • Implement systems to improve the efficiency of kitchen production.
  • Accountable for all phases of testing for test products/recipes, acting as trainer and expert in recipe and operational procedures.
  • Assists in the development of training materials for the Kitchen and new product roll-out with Operations.
  • Conducts step down product/recipe training for District Managers, Chefs, Sous Chef for both Company and Franchise Operations.
  • Maintains a current project list and gains approval of priorities with VP of Operations.

How you’ll work:

  • Variable shifts of at least ten hours, holidays and weekends. Typical work week is 50-55 hours.
  • Regularly lift items 30-50lbs or more, extensive standing and walking, use of motions of pushing, pulling, stretching, continuous bilateral use of fingers and wrists, bending, stooping, twisting.
  • Work with hot, cold, and hazardous equipment; operate phones, computers, and other office equipment.

How you’re qualified:

  • Culinary School graduate, BS in food science from accredited university, or 7+ years of executive chef
  • Passionate about hospitality and driven by team-based success.
  • Focused on service for internal guests (team members) and external guests (customers).
  • Knowledgeable of technology systems. Proficient in restaurant cleanliness and safety, food service, personnel management, and financial and administrative management. Current state and local food and alcohol certification or ability to obtain them.
