Apply today! POSITION SUMMARY:The Sous Chef works cooperatively with the Executive Chef on food production for resident meal, food and nutrition needs. The Sous Chef is a production supervisor, ensuring that all menu items are produced as indicated by the production sheets, catering orders and physician prescribed diets. EDUCATION & EXPERIENCE:- High school graduate or equivalent.
- Three years supervisory experience in professional food service operation.
- Current food handlers’ card.
KNOWLEDGE, SKILLS & ABILITIES:- Organizational skills; training and coaching skills.
- Problem solving and reasoning skills.
- Good judgment with the ability to prioritize and multi task.
- Working knowledge of kitchen equipment, operations, maintenance and kitchen layout.
- Knowledge in therapeutic diets and how to produce them.
- Understand local, state and federal regulations regarding OSHA laws and health and sanitation regulations.
- Excellent English communications skills both verbal and written.
Essential Duties as MANAGER:- Completes all annual staff performance appraisal forms, directly or through subordinates; delivers to Human Resources through department head by due date. Meets with staff members on an ongoing and continual basis to review performance and provide feedback, guidance and instruction needed.
- Selects candidates, trains, assigns and supervises staff, directly or through subordinates. Ongoing evaluation of performance of staff, initiates disciplinary action and consults with Human Resources regarding employee issues.
- Plans for and recommends space, staffing, training and equipment needed to meet resident needs and /or to provide other services. Needs are demonstrated by budget, goals and objectives, reports and other departmental records.
- Prepares annual budget to provide appropriate level of care and establish financial goals. Justifies assumptions used in compilation.
- Participates in applicable committees and meetings as required.
- Completes required in-services.
- Responds to internal and external communication timely and appropriately utilizing customer service approach.
- Promotes a teamwork mentality throughout all aspects of position.
- Communication and support of campus wide initiatives and goals to staff level to ensure all employees are aware of the organization’s overall goals and objectives.
- Develops & implements departmental policies & procedures.
- Supports employee Safety programs and initiatives, ensuring no lost time caused by work related injuries.
ESSENTIAL FUNCTIONS:- Monitors food service prep and production lines assuring meals are prepared accurately and on time.
- Assure that all meals are prepared and served in a palatable and appetizing manner.
- Assure that food is prepared in accordance with standardized recipes and special diet orders.
- Inspect special diet trays to assure they are correct.
- Completes forms, reports, inventories and related documentation.
- Provides for a positive and calm work environment.
- Ensures food storage areas are clean and properly organized at all times.
- Oversees food handling and sanitation procedures. Responsible for local and state health department regulations compliance.
- Purchases food, supplies and equipment through approved vendors.
- Ensures stock levels of staple and non-staple food, supplies, equipment, etc. are maintained at appropriate levels.
- Assists in inventory process and storing incoming food and supplies.
PHYSICAL DEMAND:- Stands and walks the majority of the working shift.
- Stoop, bend, and stretch intermittently during work day.
- Lift up to 50 pounds.
- Carry up to 50 pounds.
- Pull and push food carts.
WORKING CONDITIONS:- Exposure to bloodborne pathogens: Level III
- Work is primarily in kitchen and dietary service areas.
- May be exposed to slippery floors, hot equipment and food, strong odors.
- May be exposed to heat and noise.
- Subject to frequent interruptions
- Subject to sudden temperature changes when entering refrigerator.
- Flexible scheduling of days and hours, depending on food service demands.
- Works in a fast paced environment.
