The Pastry Sous are responsible for monitoring the team’s production and pace throughout each day. The Pastry Sous will go through extensive training with the Executive Pastry Chef of their respective store. Our training is structured so that the Pastry Sous builds a strong product-knowledge foundation, gains the skills to be able to train the team underneath them and learns to handle many different situations that may arise within our kitchen.

WHO WE WANT

We are looking for (1) candidate to work directly with the pastry chef and assist them in running the kitchen’s day to day tasks and operations. We want someone that is willing to put massive amounts of love, care and dedication into creating the world's most beautiful donuts! This candidate will have the opportunity to flourish and grow as we continue to expand in 2020! We want someone who isn’t about that typical restaurant life!

RESPONSIBILITIES/EXPERIENCE

Leadership
  • Acting in a responsible manner that promotes the culture, values and mission of The Salty Donut
  • Setting the example for their team by maintaining consistent attendance and punctuality
  • Directing the team to ensure proper training and updates them as needed of any changes that need be made
  • Ensuring all of the BOH team members uphold Salty’s standards of product quality
  • Training new team members on the respective station in the kitchen where they’ll be working, as needed, during their orientation/onboarding/training period
  • Communicating effectively with other leaders in the kitchen which include the Pastry Chef and other leads
  • Forming a strong, cohesive team that enjoys working together by providing an environment that promotes growth and accountability with a humanized leadership approach
  • Ensuring that they are promoting a team environment and getting to know the team on a personal level
  • Praising their team on both small and large victories. It’s important not only to communicate when improvements are needed, but also when things are being done well. This allows them to promote a positive work environment that Salty is known for and loves

Key Responsibilities
  • Having thorough knowledge of all the ‘disciplines’ in the kitchen so that they are able to fill in for any BOH employee at any time. These disciplines include: dough mixing, overnight bake (cutting, proofing, frying), decoration, and prep
  • Understanding the breakdown of donut quantities needed for each day
  • Being able to maintain the decoration pace, follow the quantities on the board and keep the decorators on time
  • Communicating with the FOH manager throughout the day to make decisions about adjusting the day’s production quantities (cutting/adding)
  • Understanding the store delivery schedule and drivers schedule to ensure doughnuts are ready and leave on time.
  • Executing special orders or menu items Including but not limited to: Custom Letters, Custom Shapes, and Donut Towers.
  • Helping the Pastry Chef keep other team members focused and prioritizing important kitchen tasks
  • Having a thorough understanding of The Salty’s standards for: Glaze Consistency, Weight of Fillings, Flavor, Dough Texture, and Visual Aesthetics.
  • Being comfortable with & knowledgeable of all of the Salty Donut dough recipes
  • When on opening shift, conducting a donut count each day before the overnight leads shift is over, to ensure all donuts were cut for the day.
  • Ensuring the Pastry Chef is alerted of all raw dough, flat doughnuts and any other inconsistencies immediately
  • Communicating with the Lead Prep Cook to help the Pastry Chef ensure the quality of prep items is at a proper standard
  • Communicating with the Lead Prep Cook to help the Pastry Chef ensure quantities of prep items that are needed on a daily/weekly basis are being produced
  • Helping maintain the cleanliness of entire kitchen by ensuring team members are organizing and cleaning their stations (including under the tables and in the refrigerators)
  • Helping ensure product quality and freshness throughout the week by FIFO’ing the refrigerators, glazes, toppings and dry goods
  • Performing inventory as per the Pastry Chef's request.

REQUIREMENTS

  • Prior pastry experience, either bakery or restaurant
  • Extreme attention to detail
  • Ability to communicate clearly and concisely, both orally and in writing.
  • Ability to lead and inspire co-workers with an inspirational, positive and passionate attitude
  • Ability Help build and establish an infectious and diverse culture focused on creativity, open communication and excellence
