DELI COORDINATOR- BIEN MUR (SUBWAY)

Position Summary
Under limited supervision, direct and/or perform activities in support of the Travel Center operations.
Supervision Exercised
Supervised by the Bien Mur General Manager.
Supervises Deli Attendants.
Major Duties and Responsibilities
- Supervise, direct and/or perform activities designed to provide clean and safe food and beverage areas for Travel Center patrons.
- Plan and schedule personnel to cover designated shifts.
- Interview, hire, discipline and terminate employees as necessary.
- Ensure proper training for assigned personnel.
- Ensure proper temperature requirements are maintained on the deli line.
- Ensures temperature logs are completed and filed every shift.
- Ensure that workers are in compliance with health and safety standards and regulations.
- Ensures all back up foods are maintained at proper temperatures.
- Monitor standards for service operations.
- Maintain the highest standard of personal hygiene.
- Ensure that proper temperature requirements are maintained.
- Know proper food preparation, display, and storage temperatures to ensure compliance with health and safety regulations.
- Investigate and resolve customer complaints about food/quality service.
- Ensure that deli logs are maintained and completed daily.
- Ensure that cash registers are maintained and closed out at the designated times.
- Ensures that proper security measures are taken for safekeeping of funds.
- Ensures that vending machines are adequately stocked.
- In the event of Food Borne Illness, or report thereof, ensure the proper procedures are followed.
- Ensure all employee call-ins are logged and recommended action taken, if necessary.
- Ensure that concessions and buffet are opened/closed at the appropriate times.
- Perform additional duties and responsibilities as necessary or assigned.

- Ability to supervise and direct the work of employees.
- Ability to exercise sound personnel management practices while illustrating firm dispositions in dealing with employee issues.

- Ability to write and prepare standard reports and documents.
- Knowledge of buffet line operating requirements.
- Knowledge of minimum temperature requirements for food/drink preservation.
- Knowledge of Casino purchasing requirements for food/drink preservation.
- Knowledge of Tribal, Federal, State and local sanitary regulations regarding the preparation, maintenance, storage and sales of food/drink products.
Minimum Qualifications, Education and Experience
Required:
- High School Diploma, GED Certification or equivalent.
- Two (2) years experience in a restaurant or food service capacity.
- One (1) year supervisory experience.
Licensing Status
- Must be able to successfully pass a stringent background investigation.
- Will require a post-offer, pre-employment and random drug screening.
- Must complete the New Mexico Food Handlers course within 30 days of hire.
- Must successfully complete other training within 30 days to six (6) months (depending on training required) of hire date such as: CPR, First Aide, Confined Spaces, SCBA, Bloodbourne pathogens, Backflow and Prevention Certification, health and safety training.
- Ability to obtain and maintain any other licenses and/or certifications as determined by management.
Working Conditions
- Must be able to have a flexible work schedule to be able to work weekends and holidays if needed.
- Subject to hazards, which may cause personal bodily harm; smoke, common colds, influenza, dust, odors and elevated noise levels?
- Tasks may be performed on uneven, inclined cement structures and surfaces.
- Duties may involve walking, standing for long periods of time, sitting and crouching.
6. Specifically required movements include the following:
- Trunk - bend, twist, rotate, push, pull, carry
- Arms – reach, carry, lift, twist, and rotate
- Legs – lift, push, pull, twist, and rotate
- Hands – Grasp, manipulate, bilateral coordination, hand and eye coordination, overall and finger dexterity.
