CATERING SOUS CHEF: DENVER ZOO
TITLE: Catering Sous Chef

REPORTS TO: Executive Chef, Executive Sous Chef-Catering, next level Assistant General Manager (AGM) and General Manager (GM)
HOURS & COMPENSATION: Full time, Hourly, $23-$26/hr.
Job Summary: The Catering Sous Chef is responsible for overseeing quality, product levels, and inventory of product, managing food safety programs and audits, supervising and mentoring line cooks and culinary leads, and supporting the Executive Chef team directly. This position is also responsible for providing outstanding guest service to guests and employees while contributing to the mission and goals set forth by the client.

Duties and Responsibilities:

  • Oversee quality, product levels and inventory of product for Catering program
  • Operate large volume cooking equipment at multiple stations in all restaurants, including but not limited to pizza, fry, grill, wok, and prep stations
  • Support the park operation regularly and as often as required
  • Support and work directly with the Executive Chef, and Executive Sous Chef-Catering, in regards to scheduling, training and day-to-day operations
  • Motivate, train, and supervise line level employees in accordance to Federal and State Law
  • Progressively document and discipline employees according to company policy to promote better work performances
  • Conduct food quality audits and tastings park-wide to ensure adherence to state health department standards
  • Work directly with the Executive Sous Chef-Catering, to standardize recipes and cost out menu items for the Catering program
  • Maintain a friendly and approachable attitude towards the client, guests, and staff
  • Communicate clearly and openly with all staff members for overall success
  • Display a sense of urgency at all times
  • Uphold a professional appearance and mannerism
  • Follow health and safety practices at all times
  • Maintain a clean, safe, and organized work environment
  • Complete all other duties as requested

Job Requirements:

  • Ability to work in a fast-paced environment
  • Operate all equipment necessary to perform job duties
  • Physical ability to stand for extended periods and to move and handle boxes (up to 50 lbs.) of merchandise throughout the facility and perform all functions as set forth above
  • Open availability, must be available to work evenings/weekends/holidays as needed
  • 3-5 years of previous culinary experience
  • ServSafe certification or Food Handling Permit

Requirements: Five to Eight years Kitchen Manager or Lead Cook experience in high volume restaurant, country club, catering, or cultural attraction venue; Culinary Arts degree a plus; ServSafe certified, and knowledge of HACCP.
