DetailsFaculty Member to Serve as a Research Dietitian and Instructor in Nutrition and Dietetics
The Department of Nutrition and Integrative Physiology at the University of Utah is recruiting a career-line (non-tenure track) faculty member to serve as a Research Dietitian and Course Instructor. Research Dietitian duties will include managing a newly established University of Utah Metabolic Kitchen and designing and provisioning research menus/recipes, control diets, and pre-made meals for interventional studies on testing hypotheses on diet and health. Course Instructor responsibilities will include teaching in the Department’s clinical training programs (e.g., serving as a lead instructor in courses such as Culinary Medicine, or other courses in the Department’s flagship Coordinated Master’s Program in Nutrition and Dietetics). Applicants with either a PhD or MS degree in a nutrition-related field will be considered. Registered Dietitian credential or international equivalent, and foodservice experience preferred.
Research Dietitian duties will include the following:
  • Overseeing the day-to-day operations of the Metabolic Kitchen
  • Communicating and responding to investigators, study coordinators, and study subjects for study protocol dietary needs
  • Scheduling meals for research protocols to meet criteria set forth in the study protocols and per study subject preferences; ensuring kitchen staff adhere to sanitation and food safety procedures for food procurement, preparation, storage, cooking, and delivery
  • Maintaining records of study needs, food production, inventory, accounting, procurement/purchasing, supplies, and personnel; directing kitchen maintenance including equipment maintenance
  • Developing menus using standardized software (e.g., ProNutra); meeting regularly with kitchen staff
  • Attending research meetings with study investigators as needed
  • Participating in professional development activities; maintaining training and certification (CITI, GCP, University of Utah policies)
  • Overseeing and coordinating staffing needs to meet research diet demands; training kitchen staff
  • Planning, monitoring, and maintaining inventory; purchasing food from kitchen vendors
  • Developing standard operating procedures, policies, and protocols as needed
  • Mentoring students (e.g., Foodservice Rotation, Foodservice Capstone) and staff and performing performance evaluation
  • Developing, implementing, and evaluating quality initiatives regarding service and menu development; conducting quality control/audits of kitchen procedures
  • Contributing to University of Utah investigator grant applications as needed (i.e., describing services).
Teaching responsibilities will include the following:
  • Teaching courses such as Culinary Medicine or other courses in the department
  • Participating in community engagement programs through the Utah Center for Community Nutrition, assisting in the development and implementation of innovative nutrition-based culinary medicine programs within the University of Utah and broader Salt Lake communities in accordance with evidence-based strategies
  • Educating students and community members on nutritional needs, diets, healthy lifestyle, and behavior change through cooking demonstrations, cooking classes, and other innovative nutrition education
  • Supervising Teaching Assistants
  • Establishing trusting relationships with clients, community partners, and students while providing support and encouragement
  • Serving as a professional representative of the Department of Nutrition and Integrative Physiology to both internal and external clients
  • Other duties as assigned

Minimum QualificationsMaster’s of Science (MS) or Doctor of Philosophy (PhD) degree in Nutrition Science or a related field.
Preferences
  • Credentialed by the Commission on Dietetic Registration (CDR) as a Registered Dietitian (RD) or Registered Dietitian Nutritionist (RDN); possess current certification with the State of Utah or ability to obtain certification within one month of employment
  • Experience in a metabolic kitchen/community nutrition/public health/sports nutrition or related area
  • Two years of clinical or community/practical experience
  • Experience conducting engaging food demonstrations, cooking classes both in a formal teaching kitchen space, as well as in the community for groups of 10-25 people
  • Experience working with underserved populations in a multi-cultural environment
